Potato Salad with Pork Salami

Serves: 8


1 kg boiled charlotte potatoes
2 tbsp mayonaise
2 tbsp yoghurt
1tsp mustard
very thinly sliced red onion
small boiled eggs halved
chopped chives
chopped dill
chives flowers
100g Scottish Pork Salami sliced in matchstick size
salt and pepper to taste


Mix the yoghurt, mayonaise and mustard to make a dressing. Season with salt and pepper. Add the potatoes, onions and most of the eggs, herbs and salami and mixed well. Put in a wide bowl or on a large plate and sprinkle the remainder of the herbs, eggs, chives flowers and salami on top.
