Frittata with chorizo

Serves: 6


olive oil
1 sliced onion
2 left over potatoes
6 large free range eggs
1 venison chorizo
handful of peas
5 asparagus if in season or substitute for other vegetables
salt and pepper


Fry the chorizo in a little olive oil in a frying pan, when crispy add the onion and let them sweat on a low heat. Mix the other ingredients in a bowl and season well with the salt and pepper. Pour the mixture in the pan and spread everything out evenly. Place the pan in a hot oven for 20 minutes.
This can be served warm or let it cool down to eat later. Perfect for picnics.
