Fried eggs with venison chorizo & chanterelles

Serves 2


Ingredients

2 eggs
Venison Chorizo cut in small discs
handful chanterelles
Rocket leaves
Butter
Salt and pepper


Method

Fry the chorizo with some butter in a frying pan until crispy. Take out of the pan and use the same pan to fry the chanterelles. Add more butter if needed. When they are ready remove from the pan and mix with the fried chorizo and season.
Divide the chanterelles and chorizo over two plates. Top with the fried egg and some rocket leaves.
